Bacteria of the genus Vibrio can potentially cause gastrointestinal infections and septicaemia in humans.
It can be assumed that sufficient heating will inactivate all pathogenic vibrios (70 °C for two minutes inside the food). The uncertainty regarding the risk posed by excessive vibrio contamination therefore largely concerns products that are consumed raw or undercooked (BfR, opinion Nr. 011/2022).
